I will introduce some minute details which will help you understand sushi much better.
If you go to a sushi restaurant, these various points may be very important and helpful.
Please check it out and try to remember them.

But, one thing I should point out, it is not good that you insist on them or show off too much.
There is some sushi shop jargon which is known and used in conversation nowadays,
On the other hand, there is some which you had better not use in an ill-timed way. For example, some words are used only by sushi chefs.

Jargon of sushi restaurants

Agari

Green Tea is served at the end of the meal.

Ichimai-zuke

Garnishing a cut-open fish with sushi.

otemoto

It’s chopsticks.

Oaiso

It’s a bill., but you should not use it very often.

Odori

Live shrimp. It was like they were dancing when alive.

Katami-zuke

Garnishing one side of fish with sushi.

Kappa

It’s cucumber. it is said that Kappa which is a well- known mythological creature from Japan.

Mantis shrimp

Gari

Pickled ginger in sweetened vinegar.
It comes from the sounds when you bite it and when ginger is shaved by a machine.

Kizu

Kanpyou dried yuugao flesh.
It comes from the town of Kizu in Shiga-prefecture.
It is a well-known product of Kizu.

Gyoku

Rolled omelet

Kurakake

Putting a sushi item (neta) on rice shaped like a saddle

Geso

Squid legs, it comes from gesoku (footwear)

Sagaya

Minced boiled fish meat. It comes from an old song.

Sabi

Short for Wasabi

Syari

Vinegared rice, it comes from the word for Buddhist teachings.

Tama

Bloody clam. It comes from the round ball (tama) pattern on its body.

Tamawari

Diluting with water. Water was called Tama a long time ago. During the Edo period, water was drawn from the Tamagawa River.

Zuke

A part of red flesh
When we didn’t have refrigerators a long time ago, we soaked such parts in soy sauce to preserve it from spoiling.

Tume

Sweet sauce for Anago or Tako

Teppou

Nori-roll, it comes from the shape looking like a teppou (gun)

Toro

Fatty tuna. There are different types and names: Ootoro, Chuutoro
